HALSALL'S HONEY

Halsall's is a family-run business that has been a popular attraction
at the Metcalfe Farmers' Market for many years. Brent and Audrey,
who keep bees in seven yards around the Metcalfe area, sell
a variety of honey (liquid & creamed) and beeswax products,
including unique hand-dipped candles and beeswax ornaments.
The Halsall's children, Shaun and Jessica, help out with chores
on the farm which also produces a range of organically grown vegetables,
including garlic. Brent, who has been a beekeeper for over 20 years,
also offers a little education at his market stall, frequently conducting
impromptu lectures to fascinated visitors, young and old, who crowd around
his stall to watch him making candles or to try to spot the Queen bee in a
photo of a hive. What makes Halsall's Honey a cut above the rest lies in his
old-fashioned processing system. The secret? To retain honey's maximum
flavour, aroma and goodness, it should be only lightly strained and heated.
